I am not much of a cook, so I let my wife look through this book and the following is her review:

If you want to learn about how to cook vegetables more skillfully and imaginatively, Id recommend giving this book a try. It emphasizes knowledge of ingredients and techniques and how flavors can work together, then encourages you to experiment with creative but logical variations.

Although this is not by any means a vegetarian cookbook -- the author makes clear very early that she has nothing against animal-based foods -- strict vegetarians could use many of the recipes as is and adapt the rest.

The book is structured logically from general information (Part I: Prep) to specific recipes (Part II: Cook, divided into chapters according to cooking method) to a useful index that makes it easy to locate any particular ingredient or recipe.

Recipes are clear, detailed, and easy to follow. Dont just read the ingredients list and go. The introductions and directions explain not only what to do but why to do it so that the recipe turns out the way you want it and so that you can apply what you have learned to other dishes you might want to cook. Very experienced cooks might find the amount of detail annoying but less experienced cooks will appreciate it.

The design of the book is lovely, with lots of full-page, full-color photographs, and headings, ingredients lists, and graphic flourishes in attractive shades of green. The recipes are very well laid out, each with an engaging, useful introduction (dont skip the intros), a double-column ingredients list in large type, and a clearly numbered progression of instructions. I just wish that the text type were a bit heavier.

Aside from a few too many "yums" and "yummies," the authors prose style is generally appealing -- personal, straightforward, and frank. Most important, the directions and explanations are admirably clear and encouraging.
What an unexpected treat I have found in this cookbook! Ive never heard of Susie Middleton, nor have I read Fine Cooking magazine so I had no preconceived ideas about this cookbook.

My favorite vegetable cookbooks are The Shoshoni Cookbook, The Greens Cookbook, and Fields of Greens. In my opinion, those three cookbooks set the bar for creative, delicious vegetable recipes VERY high. Well, move on over old favorites...a new favorite is on the shelf! Seriously, The Fast, Fresh & Green cookbook is going to be my new "go-to" book because of its combination of simple techniques, minimal ingredients, and creative use of just a few basic "seasonings."

I read this cookbook in one sitting. This is not simply a collection of recipes, it is very much a book for "veggie lovers," just as the subtitle of the book indicates.
